Olives and carrots chicken tagine

Ingredients
- 6 chicken drumsticks
- 4 carrots
- 300g pitted green olives
- 2 onions
- 1 teaspoon ginger
- 1/2 teaspoon turmeric
- 1 cinnamon stick
- 1 pinch saffron
- olive oil
- 1 clove garlic, crushed
- Coriander
- Salt
- Pepper
Instructions
- Let’s prepare our tagine:
- Brown the chicken drumsticks in a little olive oil, salt and pepper in a cooking tagine. Once the chicken is cooked, set aside.
- Slice the onions, fry in a little oil, and add turmeric. Meanwhile, peel the carrots and cut into slices. Once the onions are browned, add the chicken, carrots, green olives, cinnamon, ginger, coriander, garlic, saffron and adjust the seasoning with salt and pepper.
- Finally
Add water to cover and cook over low heat for 40 min.
