Parsley and figs couscous salad
This couscous salad is served at fancy restaurants during fig season, it is very easy to prepare and you are going to love it.
Here are the ingredients you are going to need:
Ingredients
  • 375g couscous
  • 125 ml of boiling vegetable broth
  • 250 ml orange juice boiling
  • 250g dried figs, chopped about 1 cm
  • 125g chopped arugula
  • 125g of chopped parsley
  • 125 g pine nuts
  • 125g cooked chickpeas
  • 200g diced peppers
  • For the orange vinaigrette:
  • 125 ml olive oil
  • 1/2 tsp salt
  • 2 tbsp cider vinegar
  • 4 tbsp orange juice
  • Pepper
Instructions
  1. Let’s prepare our couscous salad:
  2. Put the couscous in a large salad bowl, and then pour in the broth and mix. Let stand for twenty minutes, and then mix well.
  3. Add enough orange juice to cover the couscous. Cover and let stand 10 minutes.
  4. Finally
    Add remaining ingredients, and then pour in the orange vinaigrette. Mix well and garnish each serving with a whole dried fig.
