Peas and octopus tagine
This is a very popular Tunisian dish in which octopus tentacles are cooked with peas, the flavors blend wonderfully.
Here are the ingredients you will need:
Ingredients
  • 500g peas
  • An octopus
  • 10 ml oil, preferably olive oil
  • 1 large onion
  • 6 cloves of garlic
  • 1 teaspoon of black pepper
  • 1 tablespoon paprika
  • 1 teaspoon of turmeric
  • 1 tablespoon tomato paste
  • 2 green chilies
  • A few sprigs of parsley
Instructions
  1. Now for the preparation:
    Rinse well the octopus for several times.
  2. Bring a pot of water to boil.
  3. When it boils, submerge the octopus tentacles and poach them for 5 minutes.
  4. Cut each tentacle into bite-size pieces.
    In a pan, pour oil, add chopped onion, crushed garlic, chunks of octopus
  5. Fry the whole.
  6. Season with pepper, paprika, turmeric.
  7. Add tomato concentrate paste over low heat to let it brown.
  8. Pour a bowl of water, cover and simmer over medium heat.
  9. Add more warm water as needed.
  10. Meanwhile, remove peas’ outer layer and rinse very well
  11. When the octopus pieces are almost cooked, add the peas and cook
  12. When everything is cooked, add the green chilies and chopped parsley,
  13. then simmer for 2 min.
  14. Add salt when needed
  15. Serve hot with a wedge of lemon.
