Peas and octopus tagine
This is a very popular Tunisian dish in which octopus tentacles are cooked with peas, the flavors blend wonderfully.

Ingredients
- 500g peas
- An octopus
- 10 ml oil, preferably olive oil
- 1 large onion
- 6 cloves of garlic
- 1 teaspoon of black pepper
- 1 tablespoon paprika
- 1 teaspoon of turmeric
- 1 tablespoon tomato paste
- 2 green chilies
- A few sprigs of parsley
Instructions
- Now for the preparation:
Rinse well the octopus for several times. - Bring a pot of water to boil.
- When it boils, submerge the octopus tentacles and poach them for 5 minutes.
- Cut each tentacle into bite-size pieces.
In a pan, pour oil, add chopped onion, crushed garlic, chunks of octopus - Fry the whole.
- Season with pepper, paprika, turmeric.
- Add tomato concentrate paste over low heat to let it brown.
- Pour a bowl of water, cover and simmer over medium heat.
- Add more warm water as needed.
- Meanwhile, remove peas’ outer layer and rinse very well
- When the octopus pieces are almost cooked, add the peas and cook
- When everything is cooked, add the green chilies and chopped parsley,
- then simmer for 2 min.
- Add salt when needed
- Serve hot with a wedge of lemon.
