Pork tagine
This recipe is inspired by typical Moroccan tagines, but it uses a very different ingredient, we are going to use pork instead of lamb which is the meat of choice when making tagines.

- 800 g of pork
- 6 potatoes
- 3 carrots
- Two large onions
- 12 dried apricots
- 20 green olives
- One tablespoon argan oil
- One tablespoon olive oil
- 100g raisins
- 1/2 glass of vegetable broth
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Pepper
- Salt
Instructions
- Now, let’s see how to make this pork tagine:
- Finely chop the onions and let them cook just a little bit in a cooking tagine with your one tablespoon of olive oil.
- Cut the pork into 3cm cubes and put them in a tagine, with the onion on the side and brown your pork pieces on each side. Mix the onion with the pieces again and add the spices.
- Cut the vegetables into medium dice and add them, season with salt and pepper.
- Finally
At low heat simmer for one hour, then add your dried apricots and raisins on top and sprinkle everything with argan oil, simmer for another hour, while making sure that the meat is tender, if it is done, take it out even before time.
