Potato and artichoke chicken tagine
Artichokes are one of my favorite vegetables, they can be eaten raw or cooked like in tagines, and you will need the following ingredients to make a fantastic potato and artichoke chicken tagine:
Ingredients
- 1 chicken
- 1 onion, cut into cubes
- 2 tomatoes, cut into cubes
- 1 clove garlic
- 1 tablespoon olive oil
- 3 tablespoons chopped coriander
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon turmeric
- 1 cinnamon stick
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 bay leaf
- A pinch of saffron
- 2 artichokes
- 2 potatoes
- 1 cup green peas
- 1 cup water
Instructions
- Now for the preparation:
- You can either cut your chicken into pieces or leave it whole.
In a cooking tagine on very low heat, start by adding the onion, spices (don’t add the cinnamon stick yet), oil and bay leaf. - Keep stirring until the onion pieces are a little cooked, then add the chicken.
- Add your cinnamon stick, tomatoes, and crashed garlic.
- Add just a little water.
- Close the lid and let cook on very low heat for as long as it is needs, make sure to add water when there isn’t enough.
- When the chicken is nearly cooked, add your potatoes cut into large wedges and artichoke hearts.
- Don’t forget to add some water if there isn’t enough.
- Keep cooking while the lid is closed until the vegetables are well done and moist.
