Potato, olives and chicken tagine
This is truly the easiest tagine recipe you can make, in fact, when people, especially women who cook for their families, are in doubt and don’t know what they should cook, they are probably going to prepare this tagine recipe, it is very easy and it doesn’t require a lot of efforts to get a great result.

- Half a chicken cut into pieces (keep the skin if you would like to)
- 1 onion, cut into strips
- 1 tomato, grated
- 4 small potatoes, cut into wedges
- 3 cloves minced garlic
- One teaspoon of salt
- A pinch of saffron diluted in 250 ml of water
- One teaspoon of ground turmeric
- Two teaspoons of ground ginger
- Half a teaspoon of pepper
- Two tablespoons of canola or olive oil
- 100 grams green olives
- Two tablespoons of chopped parsley
- A piece of preserved lemon (cut into small pieces)
Instructions
- Now for the preparation:
- Heat the oil over medium heat, Add the onion and cook until it becomes soft and it changes color
- Add chicken, spices (salt, pepper, turmeric, ginger), tomato and diluted saffron , with its water
- Stir everything and cook for thirty-five minutes on very low heat, if the chicken is not very tender, it may require more time
- Remove the chicken and place in a baking dish.
- Add the olives, potatoes, preserved lemon, garlic and parsley to the tagine and cook over medium heat until potatoes are cooked.
- Reduce the sauce to thicken it
- Roast chicken in the oven for a few minutes, this is optional
- Pour the sauce over the chicken and serve hot.
