Raisins mrouzia tagine
This is a very sweet tagine that you are certainly going to enjoy tremendously.
And here are the ingredients:
Ingredients
  • 500 g cubed beef
  • 1 onion, cut into strips
  • 1 tomato, grated
  • One teaspoon of salt
  • Half a teaspoon of pepper
  • Half a teaspoon of ground ginger
  • Half a teaspoon of turmeric
  • A pinch of saffron
  • Half a teaspoon of ras el hanout
  • 2 chopped cloves of garlic
  • 2 tablespoons of canola oil
  • 2 tablespoons of chopped parsley
  • Sesame seeds for garnish (optional)
  • 150 g of toasted almonds for garnish (optional)
  • 250 ml water
  • For the Tfaya (raisins and caramelized onions)
  • • 3 tablespoons of canola or vegetable oil
  • • 2 onions, sliced
  • • Pinch of salt
  • • 375 ml water
  • • 200 g of raisins (pre-soaked in water for 5 minutes)
  • • 3 tablespoon honey
  • • 1 teaspoon of cinnamon
Instructions
  1. Now for the preparation:
    Heat the oil in a cooking tagine and add the onion. Stir over medium heat for a few minutes
  2. Add the tomatoes, spices, meat, garlic and parsley. Stir and add water
  3. Cook for about one hour on very low heat
  4. Tfaya: In a small saucepan, pour the oil, add the onions and a pinch of salt
  5. When the onions have lost their liquid, add the honey and cinnamon.
  6. Drain the raisins and add them to the pan. Mix well and continue cooking for 15 minutes
  7. Presentation: Place the meat in the center of a decorated serving tagine and pour the sauce around.
  8. Place the raisins on top of the meat in the center.
  9. Sprinkle with sesame seeds or toasted almonds
