Salmon Moroccan tagine
Fish tagines are very famous here in Morocco, but the one thing most people don’t know about this country is that there is no salmon production! It is not a local fish.
This means that this salmon Moroccan tagine is an adaptation, and you can be creative when preparing it as well.
Here are the ingredients you are required:
Ingredients
  • 1 bunch of chopped parsley
  • 1 bunch of chopped cilantro
  • 4 cloves of minced garlic
  • Half lemon juice
  • 2 large sliced tomatoes
  • 1 green pepper
  • Half a red pepper
  • 4 potatoes sliced
  • One teaspoon of salt
  • Half a teaspoon of pepper
  • Half a teaspoon of cumin
  • One teaspoon of paprika
  • 150 ml of water
  • Half a salmon
  • Four tablespoons of tomato paste
Instructions
  1. Now for the preparation:
    Place the parsley, cilantro and garlic in a large bowl.
  2. Cut half of a bell pepper into small pieces and add them to the bowl
  3. Add the spices, lemon juice and water.
  4. Mix well with a spatula or spoon
  5. Cut your salmon into two chunks (the size of the palm of your hand) and place in a large bowl.
  6. Marinate the salmon with the marinade and refrigerate for at least 30 minutes
  7. Cook the potatoes for a few minutes in a saucepan of boiling salted water and then drain them
  8. Oil the tagine, and add the potatoes at the bottom
  9. Add the salmon and place the tomato wedges and slices of pepper (red and green) on top
  10. Pour the marinade over the ingredients.
  11. Shake the tagine slightly so that the sauce is scattered everywhere.
  12. Cover with a lid
  13. Bake in the oven at 400 F (200C) for about 45 minutes or until salmon and potatoes are cooked .
