Spicy couscous salad with squash and feta
This is a very simple spicy couscous salad with squash and feta cheese, it is quite easy to make and you are certainly going to like it a lot.
These are the ingredients you will need:
Ingredients
  • 1kg butternut squash
  • 5 cloves garlic, unpeeled
  • 200g couscous semolina
  • 2 tablespoons ras el hanout – (spices for couscous)
  • Grated zest of 1 organic orange
  • 250-300 ml of hot vegetable stock
  • 50g toasted almonds
  • 1 handful (of each) mint and parsley
  • 150g feta cubed
  • Juice of 1 lemon
  • Three tablespoons olive oil, a bit for cooking squash
  • Salt
  • Freshly ground black pepper
Instructions
  1. Now, let’s make our spicy couscous salad with squash and feta:
  2. Peel the squash and cut into cubes and place on a baking sheet.
  3. Scatter the garlic cloves unpeeled.
  4. Drizzle with a little olive oil, salt and pepper.
  5. Bake at 180 ° for 15-20 minutes.
  6. Check for doneness by inserting a knife, the blade must sink. Be careful not to cook too long.
  7. Remove from the oven and let cool.
  8. Meanwhile, put the couscous in a bowl with the ras el hanout and grated orange zest.
  9. Pour hot vegetable stock and cover with a plate and let rest for about 6 minutes.
  10. After this, fluff with a fork and let cool.
  11. Finally, when the couscous is cold, add the toasted almonds, lemon juice and olive oil, and don’t forget to mix the herbs. Add the diced squash and feta, mix a little, adjust seasoning if necessary. Serve cold.
