Spicy couscous stuffed vegetables
This recipe is very delicious, but it is going to require some time for preparing it as it needs a lot of attention, but the taste is simply amazing.
Here are the ingredients you will need:
Ingredients
  • For spicy couscous
  • 250 g couscous grains
  • 1 onion
  • 50g butter
  • 10-15 raisins
  • 4 cloves
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon of turmeric
  • 1 tbsp sunflower oil
  • For stuffed vegetables:
  • 4 tomatoes
  • 6 zucchini rounds
Instructions
  1. Now, let’s prepare our spicy couscous stuffed vegetables:
  2. Start by preparing the couscous by first cooking the grains in water and putting the same weight of water as semolina, take off the heat when the grains have completely absorbed the water, add the butter, turmeric, mix and let rest for 5 minutes.
  3. Meanwhile, peel and finely chop the onion and sauté in a pan with a little oil for 5 minutes.
  4. Rehydrate the raisins in water.
  5. Then stir into the pan with the onion, stir well the other spices and add in the couscous and raisins. Heat for 5 minutes until the semolina really absorbs the spices, stirring constantly.
  6. Precook the zucchini for 5 minutes on steam.

    Drain the vegetables of their flesh and stuff them with the spicy couscous and cook for 10 minutes at 180 ° C.
