Spicy hot couscous

It calls for the use of harissa, which is a North African hot sauce.

- 4 courgettes
- 4 large carrots
- 4 large turnips
- 2 fresh artichokes hearts
- 3 nice round and fresh tomatoes
- An onion
- 200g of beans
- 1 red pepper
- 1 small can of chickpeas
- Tomato paste
- 4-6 pieces of lamb
- Salt and pepper
- Three tablespoons of hot harissa or three bird chili
- Spices for couscous (ras el anout)
- Hot paprika
- olive oil
- Average couscous
- Butter
Instructions
- Let’s prepare our spicy hot couscous:
- Fry in a large couscoussier with oil your lamb pieces, cover with water, add salt, spices and cook on low heat.
- Add the peeled vegetables (carrots, turnips, artichokes) and cut into large pieces the tomato, also add the chickpeas and the harissa or minced chilies. Allow to simmer uncovered.
- When everything is cooked to perfection, wet couscous with saltwater, let rest, place in the sieve of the couscoussier over the sauce so that the steam permeates the semolina grains. When it passes through the couscous, crumble it on a cloth, rewet it and then put it back in the top couscoussier.
- When the couscous is cooked, add a good knob of butter and mix.

Have enough couscous on each plate, form a well and add the sauce, vegetables and meat in the center.
