Spicy vegetable couscous
I received this recipe from a French reader, and although French cuisine is not known for spicy foods, this reader recommended me this recipe because it was very healthy and also because it contains one of my favorite vegetables, chilli peppers.

Ingredients
- 1 large zucchini
- 1 red pepper
- 1 yellow pepper
- 4 carrots
- 350g chickpeas
- 1 large onion
- 3 glasses of tomato puree
- 1/2 bouillon cube for couscous
- Two cayenne peppers
- 2 cups couscous semolina
- 2 glasses of water
- 40 g butter
- 4 pinches of salt
Instructions
- Now, let’s prepare our spicy vegetable couscous:
- Cut the carrots into rounds and the onion into small pieces.
- Cook the carrots with onion , half bouillon cube for couscous, tomato puree and about 1 cup of water. Add diced cayenne peppers. Stir and cover.
- Cut zucchini and peppers into pieces, and add the carrots once tender. Also add the chickpeas.
- Simmer over low heat for about 30 minutes, stirring occasionally to prevent sticking to the pot.
- Ten minutes before serving, prepare your couscous. Put butter and salt in a tupperware with lid, pour two cups of boiling water over it.
- Melt and Mix the butter and then add the semolina. Mix well to obtain a homogeneous mixture then cover rapidly for 5 minutes.

After 5 minutes fluff the couscous with a fork and let it rest for 1-2 minutes and cover until ready to serve.
