Steamed fish couscous
This is a Tunisian couscous recipe that’s typical of the island of Jerba in the South of Tunisia.

- 150g couscous
- 3 medium fish
- 3 pieces of pumpkin
- 3 carrots
- 2 medium onions
- 1 potato
- 4 cloves garlic
- 2 peppers
- 2 tablespoons tomato
- 1 small glass of olive oil
- 1 teaspoon hot paprika
- 2 teaspoon of cumin
- 1 handful of chick peas
- 1 L of water
- Salt and pepper
- 1 bunch of parsley
Instructions
- Now, let’s prepare our steamed fish couscous:
- remove the scales and fins of the fish and the heads if you want to.
- The Vegetables must be washed and cut.
- In a bowl mix 1 tablespoon diced tomato, 1 teaspoon paprika, salt, cumin, 3 tablespoons oil, 1 diced onion. Cut parsley into small pieces, potato, salt and pepper.
- In a pot, add water, 1 tablespoon of tomato paste, 4 tablespoons oil, chickpeas, onion, garlic, carrots, pumpkin, salt, cumin and pepper.
- And allow to cook for 20 minutes.
- Now, let’s talk about the couscous. 4 tablespoons of water is added, 1 tablespoon of olive oil to soak it and place it in the steamer, After removing the fish, which has baked for 2O minutes. Put the couscoussier steamer on top and let cook your couscous for 20 min.
- You can use instant couscous, it will taste the same minus the hassle.
- Mix the couscous with the sauce and add the fish on top, the vegetables and peppers as well.
