Stuffed fish with rice tagine
This recipe is not going to be made in a tagine pot so to speak, it is going to be made in other cooking utensils, but for serving, you are going to need a beautifully decorated tagine.
Here are the ingredients you require:
Ingredients
  • 2 fish, preferably whiting
  • 500 grams of white rice
  • 3 sliced tomatoes
  • 4 potatoes sliced
  • Half lemon juice
  • Salt to taste
  • Pepper (to taste)
  • Three tablespoons of chopped parsley
  • Two tablespoons of chopped cilantro
  • One teaspoon of paprika
  • Water (for cooking)
  • 2 grated tomatoes
  • 2 chopped cloves of garlic
  • Two tablespoons of butter
  • Half a teaspoon of ground cumin
Instructions
  1. The preparation:
    Wash the fish and make an incision in the abdomen. Set aside
  2. Cook the rice in a small pot of salted water
  3. Add salt, pepper and butter
  4. In a square baking dish, place the grated tomatoes, garlic, spices (paprika, cumin, salt, pepper), lemon juice, parsley, cilantro and mix
  5. Place sliced potatoes at the bottom of the mold
  6. When the rice is cooked, drain and add a little parsley, coriander, a little lemon juice and salt, pepper and add half a teaspoon of paprika
  7. Stuff the fish with rice and place in pan over potatoes
  8. Add on top the sliced tomatos
  9. Bake at 350 f (180 c) for about 1 hour (or until the potato is cooked)
