Stuffed fish with rice tagine
This recipe is not going to be made in a tagine pot so to speak, it is going to be made in other cooking utensils, but for serving, you are going to need a beautifully decorated tagine.

- 2 fish, preferably whiting
- 500 grams of white rice
- 3 sliced tomatoes
- 4 potatoes sliced
- Half lemon juice
- Salt to taste
- Pepper (to taste)
- Three tablespoons of chopped parsley
- Two tablespoons of chopped cilantro
- One teaspoon of paprika
- Water (for cooking)
- 2 grated tomatoes
- 2 chopped cloves of garlic
- Two tablespoons of butter
- Half a teaspoon of ground cumin
Instructions
- The preparation:
Wash the fish and make an incision in the abdomen. Set aside - Cook the rice in a small pot of salted water
- Add salt, pepper and butter
- In a square baking dish, place the grated tomatoes, garlic, spices (paprika, cumin, salt, pepper), lemon juice, parsley, cilantro and mix
- Place sliced potatoes at the bottom of the mold
- When the rice is cooked, drain and add a little parsley, coriander, a little lemon juice and salt, pepper and add half a teaspoon of paprika
- Stuff the fish with rice and place in pan over potatoes
- Add on top the sliced tomatos
- Bake at 350 f (180 c) for about 1 hour (or until the potato is cooked)
