Stuffing couscous
This is the couscous recipe we use for stuffing meats and poultry; you can even use it for stuffing vegetables.

- 1 kg of couscous
- 1 cup water
- Orange flower water
- 3 glasses of sugar water
- 500g raisins
- 300g melted butter
- 2 tablespoon cinnamon
- 400 g almonds
Instructions
- The preparation:
- Put 4 or 5 liters of water and boil in the couscoussier
- Coat the couscous with a tablespoon of oil, place it in the top of the couscoussier and place it to steam on the boiling pot
- When steam starts to come out, remove it and pour it into large dish (if using package couscous, let it cook for 30 minutes after water starts boiling) and crush lightly with a ladle, cool, add a little salt and drizzle with 2 tablespoons orange flower water, 3 tablespoons melted butter and mix in 5 tablespoons sugar
- Let rest for 15 minutes, and put the couscous on the boiling pot again.
- Repeat the same operation, steaming 6 times, each time adding butter, sugar and orange blossom water are in the same amounts as shown previously.
- Between each steaming, let rest 15 minutes.
- At the 7th and final cooking, put the washed and cleaned raisins in the top of the couscoussier under the couscous and when the steam starts escaping, remove all from the heat, pour in a large plate, crush slightly with a ladle to separate the grains, add in two tablespoon of cinnamon and 400g blanched almonds, fried in hot oil and coarsely crushed in a mortar.
- Stuff the chicken or meat with it; it is very delicious and flavorful as well.
