Sultan’s Tagine
I love preparing this tagine recipe when I receive friends. This is a hearty dish that creates a true Oriental atmosphere in your house. It is, of course, followed by mint tea.

Ingredients
- 500g boneless lamb meat
- 1 medium onion
- A little olive oil
- 8 potatoes midsize
- 1 large sweet potato
- 2 golden apples
- 2 Williams pears
- 15 prunes
- 15 whole dried apricots
- 1 small handful of raisins
- 2 tablespoons ras el hanout
- 1/2 teaspoon ground cinnamon
- Salt
- Fresh or dried parsley
Instructions
- Now, for the preparation:
- Place the tagine to preheat on low. Peel the onion, cut into thin strips. Cut the meat into small pieces. Sauté both in a little olive oil.
- Add spices, salt, a little parsley, sliced carrots. Add 1/2 cup of water.
- Simmer while preparing the other vegetables.
- Meanwhile, peel the remaining fruit and vegetables, cut them into pieces of varying size. Wash and cut parsley if fresh.
- Finally
First arrange the potatoes and sweet potatoes, apples and pears finally. Decorate with prunes, apricots and raisins. Sprinkle a little spices again, parsley, salt and finally cinnamon. Cook about 40 minutes, checking occasionally.
