Sweet and salty beef couscous with caramelized onions
If you like sweet and salty recipes, then you are going to enjoy this one tremendously, this couscous recipe is very famous in the city of Fez and unfortunately, you cannot find it in restaurants.
It requires lots of patience and lots of care, that’s why it can only be made at home.

Ingredients
- 2 tablespoons of olive oil
- 50 g. Buttery
- 500 g. Of beef cubes
- 1 onion, cut into strips
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 1/2 teaspoon pepper
- A few leaves of parsley tied together
- 375 ml water
- Package of couscous
- For the tfaya (raisins and caramelized onions), you will need:
- 3 tablespoons olive oil
- 2 onions, sliced
- Pinch of salt
- 375 ml water
- 200 g. Raisins (pre-soaked in water for 5 minutes)
- 3 tablespoons sugar (or honey)
- 2 teaspoons cinnamon
Instructions
- Now for the preparation:
- In a pan, melt the butter and add the oil, meat, onion, spices (salt, pepper, turmeric, ginger) as well as water.
- Add the parsley leaves
- Mix and cook in a cooking tagine for one hour, make sure there is enough water from time to time
- Now for the Tfaya:
- In a small pan or tagine heat the oil, add the onions and a pinch of salt
- Pour the water and cook over low heat for fifty minutes. Stir from time to time
- Meanwhile, prepare the couscous, as shown in the package
- When the onions have become less liquid, add the sugar and cinnamon.
- Drain the raisins and add them to the pan.
- Mix well and continue cooking for twenty minutes
- Now for the presentation:
- Make your couscous in the shape of a dome with a well in the center; place the meat in it. Pour some sauce and then add the caramelized onions over the meat.
