Tilapia tagine
This tagine isn’t really a traditional dish in Morocco, it is a newcomer, but it is very easy to make and delicious if you use Moroccan spices like I’m going to show you here.

Ingredients
- 4 tilapia fillets
- 5 tablespoons of olive oil
- 3 tablespoons of chopped parsley
- 2 teaspoon of fresh lemon juice
- Half a teaspoon of salt, if you like salty food, you can add more
- 4 carrots, cut into strips
- A pinch of thyme
- 1 teaspoon of chopped garlic
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 2 tomatoes, cut into cubes
- Water
- Olives for decoration
- 3 pieces of preserved lemon
Instructions
- Now for the preparation:
- Heat a cooking tagine on very low heat and add 3 tablespoons of olive oil
- In a bowl, add the remaining oil, crushed garlic, all your parsley, lemon juice and spices.
- Mix very well
- Place the tilapia fillets in this mixture and place on another plate
In the tagine, add the carrots at the bottom so as to shield the fillets from the heat, tomatoes on top of them, and place the fish fillets on top - Pour a little water in the bowl where the spices and oil were mixed and add it to the tagine
- Cover the tagine and cook for as long as necessary, with tagine cooking, you should be patient because you never know when your food is going to be ready.
- Add the olives and preserved lemon strips in the last minutes of cooking.
