Tofu couscous

Ingredients
- For the zucchini:
- 3 large zucchini
- 1 onion
- 1 clove garlic
- 100 ml orange juice
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 good handful of mint
- Salt
- Pepper
- For the tofu
- 3 squares of tofu
- 1 tablespoon olive oil
- Herbes de Provence
- For the couscous:
- 180 g couscous semolina
- 270 ml water
- A bit of olive oil
Instructions
- Now, let’s see how to prepare our tofu couscous:
- Wash and peel if necessary zucchinis then cut them into slices. Peel and slice the onion and chop the garlic. In a pan, fry all in one tablespoon of olive oil over high heat for 5 minutes while stirring.
- Then add the orange juice, cumin, cut mint, salt and pepper, then cover and cook over low heat for about 30 minutes.
- In a skillet, brown the diced tofu in 1 tablespoon olive oil, salt and pepper and sprinkle with herbs. Then let brown for a few minutes.
- Boil 270 ml of water in a bowl and pour over the couscous grains, then add a good tablespoon of olive oil, extra virgin one if possible, stir gently and let rise for 5 minutes. (Reheat 1 minute in the microwave if necessary, and fluff with a fork before seasoning to your taste).
