Tomato and fish tagine
This is really one of the most typical tagine dishes you can prepare, it is very easy to make and also extremely delicious, and the wonderful thing is that you can use a variety of fish.
Here are the ingredients you need:
Ingredients
  • 2 kg of fish (whiting, bream, mullet)
  • 2 kg and a half tomatoes (remove the seeds and cut into pieces)
  • One teaspoon of ground ginger
  • One teaspoon of saffron
  • 1 clove garlic, crushed
  • Chermoula (Moroccan Sauce: Chermoula of Morocco)
  • Marinate fish a few hours in the Moroccan sauce
  • Three tablespoons of vegetable oil
  • Salt to taste
  • 1 whole preserved lemon
  • 10 green olives (used after cooking the tomato)
  • Five teaspoons of chopped parsley
Instructions
  1. Now for the preparation:
    Place the tomato pieces in a saucepan and cook over medium heat, stirring often so that the tomato does not stick
  2. After complete evaporation of water, mush the tomatoes
  3. Add parsley, preserved lemon chopped into pieces and your olives
  4. Keep stirring for a few minutes until the mixture is hot again
  5. On the other hand, place at the bottom of a cooking tagine a few pieces of carrots cut lengthwise, place the slices of fish over
  6. Pour the remaining chermoula and tomato puree
  7. Garnish with olives and preserved lemons
  8. Cover and let simmer for a few minutes on top of the stove. Then, cook covered in the oven at medium heat for 45 minutes
  9. If the sauce is too liquid, pour into a pan and let it reduce until you get a creamy one
  10. Add a teaspoon of flour diluted in a little water to get a better sauce
  11. Then pour this sauce in the tagine and serve hot (you can also cook the fish in the pan on the mashed tomatoes while taking care to reduce the heat and return the fish gently without crumbling it)
  12. Then serve in a decorated serving tagine with the fish lying on the tomato sauce.
