Tunisian fish tagine

Ingredients
- 4 beautiful steaks of dogfish
- 3 cloves of garlic
- 250 g of tomatoes
- 400 grams of potatoes
- 2 lemons in brine, preserved
- 1 teaspoon of tomato paste
- 1 teaspoon harissa
- 50 g flour
- 10 cl of olive oil
- Cooking oil
- Salt and pepper
Instructions
- Now for the preparation:
- Cut into 4 the preserved lemons.
- Desalinate them in hot water for 5 minutes.
- Salt the steaks and flour them.
- Peel and cut the potatoes into strips.
- Cook them in salted water. Drain and set aside.
- Remove seeds and chop fresh tomatoes.
- Fry them in 10 cl of olive oil with the tomato paste, crushed garlic, harissa, pepper.
- Cover with water and let stew for about 20 minutes, add desalted lemon wedges.
- Cook for 10 minutes.
- In a skillet, fry the potatoes with frying oil.
- Then, fry the steaks in flour in the frying oil.
- Put them in the sauce and cook for 10 minutes.
- Pour mixture into a baking fish.
- And add the fries on top.
