Tunisian kefta tagine
The kefta tagine is a popular Tunisian dish that everyone loves, it combines hot pepper, potatoes, red pumpkin, tomato, fried eggs and sometimes sheep’s liver.
This dish is also used as a filling for sandwiches or to make a delicious kefta tagine as the main dish on its own.
Here are the ingredients you are going to need:
Ingredients
  • 3 large potatoes
  • 1 big piece of red pumpkin about 500 gr
  • 8 strong green chilies, remember that Tunisian tagines are very spicy, you can reduce this amount if you are not comfortable with spicy food
  • 5 large tomatoes
  • 5 eggs
  • 400 grams of sheep liver
  • A few sprigs of parsley
  • Salt
  • Pepper
  • Turmeric
  • 1 teaspoon harissa
  • 7 cloves of garlic
  • 3 tablespoons olive oil
  • Oil for frying
Instructions
  1. Now for the preparation:
  2. Start by preparing the vegetables, wash and wipe.
  3. Cut into small cubes the potatoes, squash and tomatoes.
  4. Season the potatoes and squash cubes with salt and pepper.
  5. Season the liver with salt, pepper, turmeric, 2 cloves of minced garlic.
  6. Cut into strips and then into cubes.
  7. Brown the pieces of liver in a little oil until cooked.
  8. In a frying pan, fry the diced tomatoes in olive oil, then add the harissa
  9. Season with salt, pepper and 5 cloves of minced garlic, cover and cook on until soft.
  10. If the tomatoes are juicy, do not add water to the sauce.
  11. The sauce is ready when it becomes thick and the water evaporates.
  12. Keep in a separate bowl
  13. Fry the vegetables in succession, potatoes, squash, peppers.
  14. Cut the peppers into thin strips.
  15. Fry the eggs, keep them a little soft.
  16. You can serve this delicious Tunisian kefta tagine in many ways, mix vegetables, have an egg in the middle, the liver and pieces all around, sprinkle with chopped parsley, or, mix all ingredients togeth
