Vegetables tagine
If you are vegan or know someone who is, then this tagine is the best one to prepare, it is very healthy and it is also very delicious, and the wonderful thing is that it cooks very quickly.
Here are the ingredients you are going to need:
Ingredients
  • 2 tablespoons of olive oil
  • 4 carrots
  • 7 zucchini
  • 1 cauliflower
  • 2 onions
  • 3 potatoes
  • 2 tomatoes
  • 2 green peppers
  • 10 green olives
  • 1 teaspoon of salt
  • Half a teaspoon of pepper
  • 1 teaspoon of paprika
  • 2 tablespoons of chopped parsley
Instructions
  1. Now, let’s look at the preparation:
    In a cooking tagine, put the olive oil; add the chopped carrots (the size of your index)
  2. Add the cauliflower, courgette and onion cut into small pieces
  3. Add potatoes, green peppers and tomatoes cut into slices
  4. Add salt and spices on top and cook for 45 minutes
  5. Do not add water! There is enough in the vegetables for the whole cooking time
  6. Add the olives 10 minutes before the end of cooking and garnish with chopped parsley.
