White beans and cow’s feet tagine
This is a very typical Moroccan dish; it is very different than the other tagine recipes because in this one, you need cow’s feet.
The sauce which is going to result from this dish is simply fabulous; it is creamy, rich, and exotically spicy.
We are only going to use a tagine for serving, however, the cooking is going to be done in a pressure cooker, it is because in a tagine this is going to take more than 8 hours to prepare!

- 250 grams of white beans, soaked overnight
- 2 cow’s feet, cleaned and cut into pieces, ask your butcher to do this
- 3 tablespoons of vegetable oil
- 3 tablespoons of olive oil
- 3 cloves of garlic, crushed and diced
- One teaspoon of cumin
- One teaspoon of paprika
- One teaspoon of teaspoon pepper
- One teaspoon of ground ginger
- One teaspoon of Moroccan rancid butter (smen)
- Salt to taste
- A pinch of saffron
- Half a preserved lemon
- Water
- 3 tablespoons of raisins
Instructions
- Now for the preparation:
In a pressure cooker, and your oils, rancid butter and spices, then add the garlic cloves, beans and cow’s feet. - Cover with water and let cook for one hour, then check for tenderness, if not, and water and let cook for another thirty minutes.
- There isn’t an exact cooking time because the cow’s feet maybe very difficult to cook and time-consuming, so, just keep adding water and cooking.
- When you are done, the meat is going to be extremely tender while the beans are going to simply melt down and produce a thick and creamy sauce.
- Serve in a decorated serving tagine.
