Winter couscous recipe

- 5 pieces of turkey meat (thigh)
- 2 onions
- 2 cloves of garlic
- 1 teaspoon ras el hanout
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 3 potatoes
- 2 aubergines
- 4 carrots
- 4 courgettes (small)
- 1/4 medium cabbage
- 1 handful of green beans
- 1/2 glass of peas
- 1/2 glass of green beans
- 1 cup chickpeas soaked
- 3 tomatoes
- 2 tablespoons tomato paste
- 1 pound medium couscous
- Salt

- Now, let’s prepare our winter couscous:
- Brown the meat with onions, garlic, spices and salt. Add the grated tomatoes, and simmer. Meanwhile prepare the vegetables, peel and cut the carrots and green beans in half, potatoes, eggplant, and whole zucchini. Add them to the well simmered meat with tomatoes and peas, beans and chickpea. Cover with water, when the broth start boiling, add the tomato paste. Close the lid and cook for 45 minutes.
- Put the couscous in a bowl and cover with water. Immediately pour, drain well, and spread, let it dry. Meanwhile put water in a couscoussier and let it boil. Once the couscous is dry, steam it on top of the couscoussiere. When you see steam coming out, remove from the couscoussiere, pour it into a large bowl and sprinkle with water.
- When it is pretty soaked again allow to dry, it is recommended to add a little salt to the couscous. Put the couscous to steam and this time you need to add butter or smen , cover with a towel and set it aside.
- Once the sauce is ready, remove the meat that you should fry it a little in a pan with a little butter. Remove the vegetables and season to taste, add 2 green peppers, a little tomato paste. Give a final cook and turn off. Leave it to rest so that the peppers release their scent.
