Zucchini and lamb tagine
The zucchini pieces are going to simply melt in your mouth while the lamb flavor is so powerful and aromatic that it will remind you of true oriental flavors.

- 1/2 kilo of lamb
- 1 onion
- 1 tomato
- 1 clove of garlic
- 2 tablespoons chopped parsley
- 1/4 teaspoon saffron
- Chicken flavoring cube
- 1 teaspoon pepper
- 1/2 teaspoon salt (to taste)
- 1 teaspoon cumin
- 1/2 teaspoon ground ginger
- 1 tablespoons canola or olive oil
- One cup of water, you may add more during cooking
- 3 courgettes (zucchini)
Instructions
- Now for the preparation
Cut the onion and tomato into small pieces and put in a cooking tagine - Chop the garlic and parsley and add to the rest
- Put the saffron, cumin, chicken flavoring, salt, pepper, ginger and mix with a wooden spoon
- Then add the lamb pieces and mix everything
- Add half a glass of water; you can add a little water during cooking if there is not enough
- Cook the meat and remove it when tender. Remove from the pot and place in a sealed plastic container
- Peel the zucchini and cut in half, and then cut each piece into 2
- Cook zucchini in the tagine
- Serve warm by placing the lamb on a serving tagine , the zucchini on top and the sauce around.
